Care notes: Hand wash only. Dry immediately with a cotton towel after washing. Do not use steel wool, scouring pads, or harsh detergents. Copper will develop a natural patina over time — to restore shine, Wright's Copper Cream is the polish Sertodo recommends.

Native Manor Note: Most paella is made in thin carbon steel or enameled pans that approximate the results. Heavy-gauge copper produces them. The difference shows up most clearly in the soccarat — that bottom layer of caramelized rice that requires even, controlled heat across every inch of the pan simultaneously. Copper is the material that was always used for paella because it was always the best material for it.
