For over a century, Madame Poulard's restaurant at the foot of Mont Saint-Michel has been serving pilgrims and travelers the same extraordinary omelettes — whisked by hand, in copper bowls, over an open fire. The copper bowl isn't incidental to that story. It's central to it. The chemistry between copper and egg white proteins is what produces the foam stability, the volume, and the texture that makes the difference between a good omelette and an unforgettable one. When egg whites are whipped in a copper bowl, copper ions bond with conalbumin — a protein in the egg white — forming a stable complex that resists deflation as the foam expands. More volume.
