Permian Copper Jam Pans
Sertodo Copper Jam Pan
Available in 1-Quart (8"), 2.25-Quart (10") + 4-Quart (12") | Single-Piece Seamless Construction | Heavy-Gauge | 100% Recycled Copper
The pan that professional confectioners have reached for for centuries. Now sized for the home stovetop.
Copper and sugar have a long history together — and for good reason. Making jam, caramel, confections, polenta, confit, or anything that requires sustained, precise, even heat over an extended cook is exactly where copper outperforms every other material. The heat distributes immediately across the entire surface, responds instantly to temperature adjustments, and never develops the hot spots that scorch a caramel or break a jam at the critical moment. This is why copper jam pans are still the standard in professional confectionery kitchens across France, Italy, and beyond — not tradition for tradition's sake, but because nothing has come along to replace them.
These are the smaller stovetop versions of Sertodo's Permian Jam Pans — the same construction, the same material standard, sized for home cooking rather than commercial production. Each pan is formed from a single piece of seamless heavy-gauge copper, hand-hammered from 100% recycled material. No seams means no weak points, no joints to stress over time, and no places for residue to collect. Just one continuous piece of copper that conducts heat from every surface evenly and cleans up completely.
Available in three sizes: the 1-quart for small-batch jams, caramels, and single-serving confections; the 2.25-quart for standard home jam-making and polenta; and the 4-quart for larger batches, deep frying, and the kind of preserving that fills a pantry. The wide, shallow profile — traditional to jam pan design — maximizes evaporation surface during cooking, which is what produces properly set jam with the right consistency and color.
Available sizes:
- 1-quart | 8" top opening diameter
- 2.25-quart | 10" top opening diameter
- 4-quart | 12" top opening diameter
Why we love it:
- Single-piece seamless construction — no joints, no weak points, no seams to stress or collect residue
- Superior heat conductivity and instant temperature response — critical for sugar work and jam making
- Wide, shallow profile maximizes evaporation surface for properly set jam with ideal consistency
- Performs equally well for jam, caramel, polenta, confit, atole, confections, and deep frying
- Heavy-gauge pure copper from 100% recycled sources — same material standard as Sertodo's full cookware line
- Hand-hammered construction hardens the copper and produces a finish that improves with age
- Three sizes cover small-batch precision work through larger pantry-filling production
- Heirloom quality — made to be used hard, look beautiful, and last generations
Native Manor Note: Most home jam-making happens in a stainless saucepan because that's what's in the cabinet. The results are fine. In a copper jam pan, the results are noticeably better — more even color, better set, less risk of scorching — because the pan is doing exactly what it was designed to do. Professional confectioners still use copper for sugar work and preserves because the physics of the material haven't been improved upon. This is that pan, hand-hammered from recycled copper, in three sizes built for a home stovetop. The pantry will notice the difference.
